Amie, one of the Road Roamers, is here to share a pancake recipe that she has changed and tweaked over the years. She’s a seasoned RV traveler and is experienced cooking even in the tightest of kitchens.

Pancakes are the golden ticket for breakfast while RVing. They’re easy to whip up, ingredients are a breeze to store, and the end result is downright comforting. Plus, nothing says ‘good morning’ quite like a stack of warm, fluffy pancakes. With just a few simple ingredients and a trusty skillet or griddle, you’re all set for a great start to your day – whether you’re nestled by a lake at the bottom of a mountain or waking up to the roar of the ocean.

She often will just gather ingredients she has on hand and create a one of a kind dish. Amie’s Special Road Roamer Pancakes have been perfected over time, balancing ease and flavor, all while juggling the quirks of an RV kitchen. They’re not just tasty – they’re streamlined and minimalistic, suiting the on-the-go lifestyle, yet immensely satisfying, allowing you to enjoy breakfast without the stress of elaborate prep or cleanup.

Amie’s Special Road Roamer Pancakes Recipe

Ingredients – Recipes makes about 8 medium sized pancakes

1.5 cup gluten free or all-purpose flour* (see note 1)

3.5 tsp. baking powder

1 tsp. fine salt

2 Tblsp. sugar** (see note 2)

Zest of one med-lg lemon

 1 cup unsweetened almond milk*** (see note 3)

2 Tblsp. apple cider vinegar**** (see note 4)

1 Tblsp. ground flaxseed

½ cup water

3 Tblsp. coconut oil

½ tsp. real vanilla extract

½ lemon, juiced

(I often add blueberries, or cut up raspberries, etc. to the pancakes once I pour them into the pan, gently pushing them into the batter.)

 Combine the first 5 ingredients in a medium/large bowl and use a whisk or fork to mix together, then make a hole in the center.  In a large measuring cup or small bowl, combine the almond milk, apple cider vinegar and ground flaxseed.  Whisk until it becomes foamy, this should take a minute or two.  Pour into the hole in the middle of the dry ingredients.  Add the water, oil, vanilla and lemon juice.  Mix with a fork and/or rubber spatula until combined – batter will not be smooth.  Set aside to rest for about 10 minutes.

 While the batter is resting, heat a large pan, griddle or cast iron pan over medium-low heat.  When it is heated, lightly coat the pan with oil.  The batter should have “puffed” up by this time.  Carefully pour ¼ to 1/3-cupfuls of batter onto the hot pan – do not overcrowd.  Cook without disturbing (except for adding fruit, etc.) until bubbles have appeared and the top side starts to look a little dry, then flip and cook for another 3-4 minutes, testing for doneness after 2-3 minutes.  Serve with real maple syrup that has been warmed up for a wonderful treat!  ENJOY!!

 *Note 1:  I have tried this with different gluten free flours and have found that the King Arthur Gluten Free Measure for Measure flour is the absolute best!

**Note 2:  I always use Lokanto monkfruit/erythritol sweetener instead of sugar.

***Note 3:  One of my adult children is allergic to tree nuts, so I have substituted oat milk.  I have never used actual milk because of all the dairy allergies in our family.

****Note 4:  The same adult child is also allergic to apples, so I have used distilled white vinegar just fine as well.

    1. When we are on the road it’s usually something quick like fruit most of the time something healthy or maybe just some blueberry muffins. However occasionally when we have time will do some pancakes and sausage and maybe even some eggs cooked outside. There’s nothing like it I agree.
